Pottasche dient als Trennmittel und Säureregulator, wird Backpulver zugesetzt und ist in Schokolade oder Kakaoprodukten enthalten.
Das Produkt ist ein gutes Triebmittel und reagiert mit der Milchsäure, die in Teigen enthalten ist. Dabei setzt es Kohlendioxid frei, das den Treibeffekt bei Brot und Kuchen auslöst. Vor allem Lebkuchen erhalten dadurch ihre typische Form und Farbe.
